https:\/\/sceglab.uniroma3.it\/wp-content\/uploads\/2023\/12\/IMG_0170.jpeg 707w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><span class=\"s5\">Il 21 settembre 2023, durante <\/span><span class=\"s5\">l\u2019esperienza laboratoriale di chimica<\/span><span class=\"s5\">, sperimentai la produzione di <\/span><span class=\"s5\">due <\/span><span class=\"s5\">ricottine<\/span><span class=\"s5\"> al<\/span><span class=\"s5\"> latte intero<\/span> <span class=\"s5\">aggiun<\/span><span class=\"s5\">si<\/span><span class=\"s5\"> acido acetico, per la coagulazione acida<\/span><span class=\"s5\">, e caglio <\/span><span class=\"s5\">dopo <\/span><span class=\"s5\">una leggera riscaldata, per quella <\/span><span class=\"s5\">presamica<\/span><span class=\"s5\">.<\/span><a name=\"_GoBack\"><\/a><\/p>\n<p><span class=\"s5\">D<\/span><span class=\"s5\">a questa <\/span><span class=\"s5\">esperienza<\/span><span class=\"s5\"> sono emersi diversi aspetti sensoriali<\/span><span class=\"s5\">, <\/span><span class=\"s5\">come <\/span><span class=\"s5\">la consistenza d<\/span><span class=\"s5\">ell<\/span><span class=\"s5\">e <\/span><span class=\"s5\">due \u201cricottine\u201d, che ho <\/span><span class=\"s5\">esperito con <\/span><span class=\"s5\">le mani e <\/span><span class=\"s5\">con <\/span><span class=\"s5\">le sensazioni<\/span> <span class=\"s5\">del gusto<\/span><span class=\"s5\">, prima dell\u2019ingestione<\/span><span class=\"s5\">: <\/span><span class=\"s5\">quella da coagulazione <\/span><span class=\"s5\">presamica<\/span> <span class=\"s5\">era <\/span><span class=\"s5\">pi\u00f9<\/span><span class=\"s5\"> compatta e gelatinosa,<\/span> <span class=\"s5\">ed <\/span><span class=\"s5\">in bocca<\/span> <span class=\"s5\">leggermente grumos<\/span><span class=\"s5\">a<\/span><span class=\"s5\">,<\/span><span class=\"s5\"> invece <\/span><span class=\"s5\">quella da coagulazione acida <\/span><span class=\"s5\">pi\u00f9 liquida e melmosa<\/span><span class=\"s5\">, <\/span><span class=\"s5\">con materia dispersa in soluzione<\/span><span class=\"s5\">.<\/span> <span class=\"s5\">L<\/span><span class=\"s5\">a prima <\/span><span class=\"s5\">aveva un sapore molto semplice, di latte<\/span><span class=\"s5\"> fresco<\/span><span class=\"s5\">, molto piacevole e leggero<\/span><span class=\"s5\">, <\/span><span class=\"s5\">al contatto con la lingua leggermente appiccicosa <\/span><span class=\"s5\">tanto che <\/span><span class=\"s5\">sono rimaste tracce <\/span><span class=\"s5\">finch\u00e9<\/span><span class=\"s5\"> non ho bevuto dell\u2019acqua<\/span><span class=\"s5\">.<\/span><\/p>\n<p><span class=\"s5\">Ricordo poi<\/span><span class=\"s5\"> l\u2019odore d\u2019aceto che si disperse per la stanza, mentre lo aggiungevo al latte per la coagulazione acida mi pervase le narici tanto da causarmi prurito<\/span><span class=\"s5\">.<\/span> <span class=\"s5\">L<\/span><span class=\"s5\">\u2019odore di latte caldo<\/span><span class=\"s5\">,<\/span> <span class=\"s5\">scalda<\/span><span class=\"s5\">to<\/span><span class=\"s5\">per la coagulazione <\/span><span class=\"s5\">presamica<\/span><span class=\"s5\"> mi riport\u00f2 alla mente <\/span><span class=\"s5\">mia nonna quando<\/span><span class=\"s5\"> da piccola<\/span><span class=\"s5\"> me lo preparava <\/span><span class=\"s5\">p<\/span><span class=\"s5\">rima<\/span><span class=\"s5\"> andare a dormire<\/span><span class=\"s5\">.<\/span><\/p>\n<p><span class=\"s5\">Inoltre<\/span><span class=\"s5\">,<\/span> <span class=\"s5\">poich\u00e9 sono <\/span><span class=\"s5\">molto sensibile ai rumori, m<\/span><span class=\"s5\">i rest\u00f2 <\/span><span class=\"s5\">ben <\/span><span class=\"s5\">impresso<\/span> <span class=\"s5\">il tintinnio <\/span><span class=\"s5\">d<\/span><span class=\"s5\">e<\/span><span class=\"s5\">lla bacchetta di vetro che sbatteva sulle pareti <\/span><span class=\"s5\">del <\/span><span class=\"s5\">becher dello stesso materiale<\/span><span class=\"s5\">, <\/span><span class=\"s5\">mentre mescolavo <\/span><span class=\"s5\">il latte con aceto <\/span><span class=\"s5\">o<\/span><span class=\"s5\"> caglio, per farli agire<\/span><span class=\"s5\"> e <\/span><span class=\"s5\">ottenere i due prodotti<\/span><span class=\"s5\">.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-1350\"
